The Sookie Stackhouse/Southern Vamp series by Charlaine Harris that True Blood is based on. Book!Sookie is one of my favorite heroines. Plus, she judiciously uses her word of the day calendar.
We are currently loving P.G. Wodehouse, which is light and easy fun. Have you read Murakami? Not my thing, but you might like it and I know that people who like him find him intellectually stimulating without being challenging or workish. I also think short story collections are good for tired brains, and think the Best American Short Stories from the 80s are the best.
Dunno if I've suggested these before, but for fluffy reads, Pratchett's Discworld novels. Any. If you like to keep in order, check the Wiki page for Discworld.
Fast and fun reads: * You Want Fries With That? -by Prioleau Alexander --Fun to read about this guy going through a bunch of minimum wage jobs * Heat -by Bill Buford -- I've been wanting to work in a commercial kitchen so I like books like this that give me a peek * Bel Canto -by Ann Patchett -- not so much a quick and easy book but more of a really engrossing book
For audiobooks, I haven't listened to very many because my mind tends to wander but the Harry Potter books read by Jim Dale are superbly done. One guy, does different voices for all the characters.

"Julie and Julia" is a fun light read too, especially for someone who loves to cook.
