Today I was looking for Anzac biscuit recipes (here are a couple) and came across one that omitted the coconut because the author didn't like it. My initial reaction was disbelief - surely coconut is a required ingredient? Clearly this calls for a poll.

I voted, but you don't need a poll to decide this. Anzac biscuits are protected under Australian law and thus claiming that any biscuit not following the traditional recipe is an Anzac biscuit is therefore illegal.

Well, if the coconut is needed by law you probably just couldn't see it. My experience with coconut is that it's hard to pick out if you don't know it's there (it's not like e.g. chocolate) but that you miss it when it's gone.

I haven't made Anzac biscuits since I was a kid, but I have no memory of coconut!

... but then I think in my mind they consist purely of golden syrup and oats. Just sort of swirling around in a pan, I suppose.

It's been awhile since I made them as well. Turns out they also include adding bicarb soda to a mix of melted butter, water and golden syrup, which then goes pleasingly frothy before you mix it with the dry ingredients.
