I'm so glad it's almost eggplant season. I can't get enough of the stuff.

Huh. I wonder if P. would eat tofu if it were caramelized...

Thank you for this! I have had awesome eggplant and fantastic tofu but it never comes out that way when I do it. Mayhap this is why!

ol' [sensei] had a couple of good glazes for tofu, mostly molasses or honey based, then roast it in the oven until it hardens.

Somewhere I have a mighty fine recipe for eggplant with peanut butter and chilis, cooked in the wok.
