So, as some of you already know, I'm terrified of cooking. Veggies and such I can deal with, because there's not much chance of me screwing them up. But proteins? Proteins terrify me. Every time I attempt to cook anything that used to have a pulse, I invariably fuck it up ( Read more... )

It's much easier to bake chicken than to broil it. And I'm going to disagree that it's easier to buy a roast chicken than make your own.

Procure chicken leg quarters. Something with skin still on it.
Preheat oven to 350.
Place chicken on baking sheet, skin and meat side up (bone side down).
Sprinkle with paprika, garlic powder, thyme, and black pepper.
Place in preheated oven to bake for 60 minutes. (If it's a whole chicken, do 20 minutes per pound of bird)

Also, a meat thermometer is your friend.

The Joy of Cooking has a nearly bomb-proof pot roast recipe. Just make sure you use a pot without any plastic bits to melt off.

Seconding what other people have said, a slow cooker can be an amazing friend in the kitchen if you're not confident and are will to prepare things ahead of time.
