Does it happen if you open the jpg in e.g. photoshop or GIMP, save it as a png or a tif or something else, and embed that instead?

Does the jpg open ok on the Mac? (If you can check this)

Word documents are notorious for not working across platforms which is ridiculous considering the software is written by the same company. The more complex the doc (tables, columns, embedded graphics etc.), the more likely it's going to screw up on conversion.
Was the file saved as Word for Mac on the PC or sent in PC format? Doing the former might help.
Also, JPG isn't a format Word can natively process (or at least didn't used to) so you could try converting the image to bitmap before you embed it.
Alternatively, can you email the doc and the JPG separately and ask the recipient to embed it on the Mac?

sent in pc format and it'd be fine to convert it if this was a one-off but it's an ongoing issue and add in to that that it needs to go to several people, most of whom are on pcs, and I'm not sure how well it'd all work annoyingly...

...I would have to re-do all the college logos and templates to convert to bitmap but that IS an option...

...and the doc and jpg are from me to the college principal so whilst she could embed it at her end, and that would also work as a one-off issue, it's not going to help long term sadly.

NEVER straight forward, is it? Gah!

You're welcome. We usually have the reverse problem (docs created on the Mac corrupting when opened under Windows).
The ongoing issue is the problem here. Saving it in Mac format on the PC is the first thing I'd try as the simplest.
