And that bread looks absolutely spectacular. I love sourdough. Pray tell, what is starter and how does it work?

Starter is just a yeast colony that you keep around in your fridge. That way you don't have to buy yeast at a supermarket. Since they sit around for long periods of time, there are lots of extra chemicals produced during fermentation that add flavor to the bread.
