Kumquat (or Cumquat)

I think we decided the tree in the back that has all kinds of little ripening fruits is a kumquat. Never seen one before, but after looking the net that's what it appears to be.

The birds and deer don't eat them though! ....Isn't that a bit odd?

What does one do with a kumquat? Off to do more reading (is such a geek).

The birds and other animals probably avoid them because they are tart citrus fruits....what do you do with them? Marmalade jumps to mind.

I looked this up in my handy dandy Mark Bittmann "How to Cook Everything" cookbook, and it says that the Kumquat is unusual because its skin is sweeter than the fruit. It says "wonderful poached, or chpped raw." And under preparing, it says "wash, dry, and slice or quarter; remove and discard seeds and the small amount of flesh [can that be right?]; use the skin and juice."
