when you restrict do you eat more watery foods? that would be a very simple explaination, since fruit and veg (safe foods) often cause diarrhoea

I have no fear of TMI posts :)

Eat more fibrous foods.

I don't ever get diarrhea, in fact I have quite the opposite issue.

Oat bran is a good idea (I love it better than oatmeal) or steel cut oatmeal (Irish oatmeal).

Maybe apples?
Do you eat bananas? Those help a lot of things.

There is a diet for people who experience the stomach flu or stomach surgeries called the BRAT diet
Bananas
Rice
Applesauce
((dry)) Toast (whole wheat/grains)

I always get diarrhea when I'm restricting too...I think it's because I restrict myself to eating mainly fruits and veggies - too much fiber and not enough food to properly form stools.

Well, that's not completely true. Your ancestors ate >90% of their food from fruit and veg. Mostly fruit. And how can you have too much fiber in your diet to not form proper stools?

clarification - eating too much fibrous food does contribute to diarrhea I believe. too much insoluble fiber and the food basically goes right through you...I would eat lots of carrots and (TMI) would just poops out the shredded carrots in an undigested form because that's about all I ate (and apples). Also, not eating enough bulk in general doesn't allow significant waste products to form to produce a proper stool. I could be wrong about all of this though....this is just what I know from my own experience and what I remember from learning about excretion in my biology classes in college.

I'm not too sure whether too much fiber can contribute to diarrhea or not, but I do know that eating fruit (especially when it's a variety of fruit, not just one) won't ever cause dairrhea, no matter how much you eat of it. That's from what I read on nutrition and from my personal experience speaking, which sadly is a lot because thanks to my disordered eating I've been going back and worth between constipation and diarrhea for years. Eating a lot of fruit as meals is one of the few things that calms my stomach down right away and ir works both ways.

To be "regular", make sure you're digesting enough of the following.. somewhere around:
40g fat
45g protein
14g fiber

Drink plenty of fluids!
