You need to check out Chef Marc Felix's classes at Whole Foods. He's an amazing chef, and he's been doing one all-vegan class a month more often than not since he started. (Thursday nights, 30$ a class, you eat what he prepares as he explains how he's doing it. An insanely good deal considering you'd pay far more than that to eat in any restaurant where he'd work.)
Well, no, I haven't "officially" become vegan... but I've been making a lot of vegan stuff lately and am really seriously considering going vegan.
And I would love to attend some vegan cooking classes, but as I'm living in the boonies (aka Arthur) this summer, they're not quite as accessible to me. :( I've found quite a few vegan food blogs though; and I bought some vegan cookbooks (Vegan w/a Vengeance, the Vegan Family Cookbook, and Table for Two). I remember you telling me about using seitan a while back; and I've bought some and made my own, and I loooove it's versatility. I wish I would've gotten onto this stuff sooner!
I haven't yet... but perhaps soon! Maybe little Trent and I should go out to dinner... I mean, once he has teeth and doesn't crap himself and stuff. ;)
