Oh, poor Spike! He's emotionally sensitive, and needs love and security.
I expect he'll turn back into a well adjusted cat, when he gets to a stable environment. For the moment he's abused by Spike, and feeling rejected by his remaining human. Of course he's not acting happy or regular.
When you talk about him to people try to think mostly about his best times. The last two weeks have to be mentioned, but shouldn't override everything he's been before.

Sounds like Spike might be happier somewhere where he's the only cat, too. 'Specially if he's usually meek. Could you talk to the adoption people? It can't be unusual for a cat to be confused and anxious, if it's going up for adoption - plenty of them must have had a little roughness to get through. And from all everyone's said, any at can have anxious times and quiet down again. (Even Zoe, poor woob.)

Er. Have you taken Spike to the vet? Pooping outside the litter box and constant meowing might be an emotional thing, sure, but those are both common indications of something physically wrong. If there's something going on (like, say, a urinary tract infection) that hurts him whenever he uses the litterbox he might be both very vocal and not so inclined to use the box.
It sounds like Spike is "acting out" - his world is being turned upside down and this is how he's expressing his distress. He needs a new, one-cat home, and soon. It'll take a while after he moves, but once he has a new routine and familiar environment, he'll calm down.

It could just be emotional upheaval, but may well be worth a trip to the vet at this point.
