Mid-week recipe:
Agression Cookies
This is a thin, crispy and buttery oatmeal cookie that is easy to make and easy to add to. The name comes from how it's mixed, mashing together the ingredients with your hands is quite like a stressball. A good lunchbox cookie, and easy to freeze.
Ingredients:
1-1/2 cups brown sugar
1/2 Tablespoon baking soda
1-1/2 cups margarine or butter, softened
1-1/2 cups flour
3 cups oatmeal
Directions:
Put all ingredients into a large bowl and mash, knead and squeeze. Then form into small balls and put on an ungreased cookie sheet.
Butter the bottom of a small glass and dip it into granulated sugar and mash the cookie flat, just a little. You only have to butter the glass once or twice but be sure and dip in sugar for each cookie.
Bake at 350 degrees for 10-12 minutes. Cool a few minutes then remove from pan to cooling rack.
They are supposed to be very crunchy and buttery so don't think you have overcooked them.
Variations:
Replace some of the oatmeal with corn flakes or frosted flakes.
Add chocolate or butterscotch chips, rasins or currants.
