The famous and fabulous meat pie:
1/2 lb ground turkey
1 package of Trader Joe's pizza dough (I like the kind with herbs)
4-5 sliced mushrooms
sharp cheddar, asiago, dubliner or another kind of relatively sharp and firm cheese, but nothing like feta or mozzarella.
melted butter, possibly with garlic
thyme, oregano, savory and marjoram
salt and pepper, but those are kind of a given, so I may forget to mention them
Saute meat with herbs in a little olive oil (wine optional), set aside to cool. Do the same with mushrooms, add some garlic if you want. Preheat oven to 375 or so (our oven is quirky, so you'll have to wing it). Stretch the pizza dough into an oval on a shallow tray (a pizza stone would be better, but the filling may leak a bit). Put meat and mushrooms on one half of the dough, top with sliced or shredded cheese. Flip the other end over and twist the ends together. Puncture with fork, brush with (garlic) butter, and bake until golden, brown and delicious (about a half-hour). Serve with pesto or mustard or anything else you like.
Vegetarian version:
Replace the meat filling with sauteed spinach with slivered almonds and nutmeg, or sliced asparagus with pine nuts and lemon. Top with shredded hardboiled egg and cheese.
