I have discovered the joy of baking! The act of preparing ingredients, running my fingers down recipe books, stirring, whisking, folding, adding, tasting is like a dance. A yummy dance that results in satisfied taste buds and quiet stomachs.

These look amazing - I haven't had a cream puff in ages and they're one of my favorite treats. Are they hard to make? Easily ruined? :O

Not at all - the problem is that many recipes do not specify the size of eggs to use, which can alter the choux dough. This recipe is really specific, giving all quantities in grams.

With the pastry cream the most important things are to temper the eggs as to not cook them, and to cook the cream on low low heat, never ceasing to stir the mixture.
