Adeste Fidelis is my favorite. It's in Latin, which is extra fun, and pretty much anyone can sing it loudly and competently, if not well. (Unlike O, Holy Night, which I also love, but which gets impossible right after "oh, hear the angels' voices".)

I love so many carols I don't dare claim one as a favorite, because I'd spend the next six months changing my mind, which would get extremely annoying!
