This story though is more of a vagabond/rider for hire Dean and a solitude-loving/pro riding instructor/problematic past Castiel. :3 And everything that you could imagine happening with that scenario...it happens.

I find that when it comes to niche areas of expertise (like horses), you should write it to appeal to people who know what's what. People who don't can usually figure things out as they go and follow along just fine, even if they have to tune out some of the particulars. And the equestrians in the audience will appreciate the accuracy.
"Perhaps I should take a poll: dressage rider Dean and Cas - hot or not?" HOT HOT HOT. Hot forever.
"Or why can't I enlist Misha, Jensen and a bunch of sexy expensive well-trained friesians and just make a movie instead?" Why not indeed? Perhaps we can take up a collection.
