Does anyone have any good taco reciepes or mexican food receipes in general? I have company coming over and I don't feel like cooking some random indian thing or ordering in. :/

I'm not a huge fan of Mexican but I do like this simple taco (and to make it even easier, have huge bowls of each ingredient, a stack of tacos on the side, and everyone makes their own):

tacos
white rice (boil in a pouch stuff)
black beans (canned, rinse well)
guacamole (bought in supermarket, refrigerated section)

I usually put a few spoonfuls of white rice in the taco, top that with a few spoonfuls of black beans and a spoonful or two of guacamole over that.

Forgot to mention, serve the rice and beans heated up! LOL

wow thats it? damn thats easy compared to the shit I made for my girls for dinner before!!!

Indian meals are way, way more work... and ingredients.

Well that's one kind. I don't eat meat but another is to have shredded lettuce, chopped meat (crumbled hamburger), and salsa. Actually, I've eaten that using Morningstar's "Meat" Crumbles. Some people like hot peppers in theirs too, or sour cream.

I'm quite partial to this recipe for carnitas:

It's oh so tasty, and relatively easy to do. Last time we made it, we just threw all the stuff into the cooker in the morning. when we came home from work, we shredded the meat and put it in the oven for 15-20 min while we readied the other ingredients (shred cheese, chop tomatos, heat up beans). This is basically like soft tacos, only instead of ground beef you're using shredded pork.

oh yummy... I went with just tacos with a side of light indian meal but I really appreciate all the tips.

I am a vegetarian but I could try that with beef for my friends next time. :D
