I think next week will be devoted entirely to cooking... Did I mention I'm doing an Indian cooking class?

I've been studying the various flavor regions of the country and absolutely nerding out over it. Some of the meat dishes sound good, maybe if I sub Quorn. But luckily there are so maaaany vegetarian dishes, I can really cook whatever I want.

I cook the Hare Krishna form of Indian cooking quite often. There are a lot of Hare Krishna recipes scattered around the net. They are all vegetarian.

It's a spiritual and traditional way of cooking. So it's not linked to any one region.

Another quite famous Hare Krishan cook who has written a few recipes books is Kurma Dasa. But his recipes are more involved than the recipes from the book above.

The recipes you posted are pretty typical of south indian food, especially the food of coastal Andhra Pradesh and Kerala -- the powders, pachadi, the type of veggies that are used and bitter melon and gourd recipes, sambar and rasam and the thali style in which it's served are all very typical of south indian foodways. (And there's even a recipe for curd rice!) Which makes a lot of sense, seeing as there's a lot of strong Krshna devotion in that area.

I admire you for taking an Indian cooking class. It's one of my favorite types of cooking, but I'm never sure I'm getting it quite right, from a cookbook!

I am convinced it's all in the spices, and in the early moments of building the dish, with the spices and the oils! I'll keep you posted on how it goes.
