I think she was just excited about the 12-string, not necessarily playing the song on it.

Because she's nervous or embarrassed about it. If you think something won't work the way you want it to, it's sometimes easier to call attention to it before anyone else can ("hang a lantern on it"). I do that sometimes if I haven't been practicing enough.

Jennie definitely knows how to play. She's done plenty of other great covers of Elliott's songs, as well as written some excellent tunes of her own. She's the most talented musician of this type that I've ever come across on the Internet.
In this video, she had literally JUST gotten the new guitar. She was just goofing around so she could show it to her friends.
