There's a long tradition of similarly incomprehensible Buddhist vegetarian meat substitutes.

I suspect the stuff you saw is dou fu pi, bean curd skin, and it is also used in dishes that don't pretend to be tripe. It also keeps well in a dried state without refrigeration and is easier to cook.

I first had tripe as an adult and discovered I liked it.

I find it funny that North Americans Westerners find eating food like this weird. I think i'm the only one who has no problem that my food was once alive and sentient. I hate the synthetic stuff.

i think it's more the poo factor; the stomach is part of the digestive tract, so it comes into contact with things that have begun their transition from food into poo, and we all know that (exciting as some may find it) eating poo is unsanitary.

it's stomach, and you eat it for the texture (because it has that coarsely textured inside to help it mash up food). now with that in mind, imagine getting such an interesting texture without having to draw your mind to something as unpalatable as the stomach of a cow.

"Help it mash up food"? Uh, no, unless you have way better abs than I do. The texture is to increase the surface area through which water and nutrients can be absorbed.

you don't need much musculature to do a little extra damage to food that has already been chewed up, you just need extra enzymes, some hydrochloric acid, and the keep the stuff churning. besides, most nutrients are absorbed in the small intestines, and most water in the large intestines. (imagine how difficult peristalsis would be if water were extracted from chyme while it was still in the stomach!)
