I coincidentally found a MtG store the evening of the Morningtide release here last month. I was generally weak in all 5 colors, but had the merfolk combo, good green creatures, and good black removal. It was janky as hell, but it successfully played Doran and the merfolk combo ftw.
I placed top 4, being promptly owned by Garruk + Mind Shatter twice in a row with slow starts.

err, the point is that merfolk just hilariously win sometimes, and it's fun!
I'm in the process of creating a casual merfolk deck, which I'm sure will promptly die to any sort of mass removal, but would still be fun in any large game.

Sounds like you did a hell of a fine job with your 4 (5?) color special. Lots of fixers?

There are at least two merfolk decks that I would consider building: combo-mill and beatdown with islandwalk and pumps from lords. Both of these can run counterspells, but that might make them not so fun for casual.

Have you considered making a goofy deck including Scattering Stroke? That card is so so bad but so good.

It was 4 colors with a little bit of fixing, but no cards requiring double of any color. Basically, 3rd turn Doran won be enough games that the slim mana screw was worth the added power of variety.

The cantriping bear merfolk (1U 2/1) Merrow Tracer? is amazing for that sort of beatdown.

I haven't yet, but that's plausible! Mana Drain is pretty good I hear. The possibility of bursting out on the 4th/5th turn with something absolutely ridiculous is worth considering.
