The Iowa jamon is pretty decent, but nothing like the Spanish. Authentic Iberico ham is.... it's a revelation. So. good.

Incidentally, have you or Steve every played with lardo? It's worth a shot.

Steve's gotten lardo before from Boccalone, our local charcuterie. I tried a piece by itself, but I think I prefer a little more meat with my pig fat. We get their guanciale and pancetta a lot, though.
