Using another pan to cover the pan of grease that is burning.
Covering the burning grease with baking soda that is not stored adjacent to the stove.
Using a proper, readily available fire extinguisher to fight the fire with a dry chemical or CO2.
i haven't had anything catch on fire on me yet, but i leave water to boil unattended all the time and it makes my mother nervous. i don't usually leave other things by themselves though. of course things only seem to catch on fire the one time you walk away from the stove for just a minute. =P
anyway, glad you didn't burn the place down and no one got hurt. hot oil is nasty stuff.
