worry briefly about age of leftovers
chop half aubergine and nuke with small amount of water till hissing nicely
chop half courgette into slices
warm up oil and throw veggie mince in, diving out of way of hot fat.
add cooked veg plus more froz peas and soya beans.
contemplate cooking up more carrots but decide can't arsed
add flaked chilli, everything tastes better with flaked chilli
add salt and pepper and balsamic vinegar
simmer
panic about flavour and add chopped sundried tomatoes
scoff a few sundried tomatoes
contemplate amount of aubergines and courgette
compare to size of beloved's stomach and think hopefully of extra lunch sized portion
slice more aubergine and courgette and nuke aubergine as before
make cheese sauce with cornflour, milk and french mustard
mush up sliced taters in cheese sauce
contemplate adding to pan but decide too messy.
layer aubergine,courgette and mince mix in bowl
make sure bowl is big enough before start
mess up order of layers and think bollocks to it
schlop mushed up taters and cheesy sauce on top and spread out
top up with sauce from pan
sprinlke cheese on top
chuck in preheated oven - probably should have mentioned that bit first
serve with garlic tater wedges and bread and butter.
