I have a few guesses, but I haven't done any research. The first guess is that they're not actually much more interested in Scientology than the rest of the population. It's just that celebrities are, by definition, well, famous, and so when one does something funny like talking about Thetans, people hear about it. I only know of two Scientologists, but I'm guessing you can't come up with many more than five.
My next guess is that celebrities of say, the movie star variety, live in California and get infected with the hippy-dippy liberal mindset, and as part of this, they abandon traditional belief systems. But it's still hip to be "spiritual", so they find something else.
Third, and this is related to the second, celebrities of the movie star variety (I'm assuming this is the type you're talking about, and not politicians or academics renowned enough to warrant celebrity status) aren't required to be all that educated. So when they're picking a new religion, they're likely to pick a dumb one.
I believe Scientology also targeted celebrity converts (ex- they set up a huge fancy facility conveniently in the middle of Hollywood) as means of promotion.
