The first picture looks like privot (it's a type of..erm hedge if you will -- like a boxwood). basically you can crop that one to grow how you want. Most people crop in the winter because then in the spring, it sets buds and grows nice and uniform to begin with. I can't tell what the second one is but I think I could probably get an identification for you.

Make sure when you mulch, you don't cover the crown of the tree. they don't like that much (its like a ball at the base, like looks like a joint. Your nectarine tree, the crown is justttttt sitting above the ground. so thats good but when you mulch, yesss be aware.

From what I've read, mulch isn't supposed to actually touch the trunk of the tree at all, so no worries there.
