Depends on the job. "I don't suffer fools gladly" works fine unless you're going to need to. "Evil sense of humour" or "trouble restraining my sense of humour" could possibly work, too, although probably not if she's applying for a job at a hospice.
I think you just have to be honest. I was asked that when I had the interview for my new job, so I just told them what I found hard and how I deal with it. They just want to see that you have a good rounded view of your abilities and some insight into what you need to develop.
How about, "Sometimes it all gets too much for me and I stab a co-worker repeatedly with a letter opener. However, because I have great initiative and attention to detail, I am very good at disposing of the body without a trace to incriminate me or embarrass the company"?
