Ugh I have not been sleeping much lately. I don't want to go to bed when I first get tired at around 11 so I stay up and then I get a second wind at about 12 and don't get tired again until like 3 in the morning!!! Then I'm tired all day long until about 6 or 7 in the evening ( Read more... )

Stir fry is a really good way to make something healthy - you just get a bunch of veggies and slice up chicken and cook it all together. I also just put a limit on the bad things I like to eat, for example, I only let myself have ice cream once a month cuz otherwise I go overboard. Soup is really good and its healthy! well, some kinds of soup. But stir fry is really easy and fast and I think its really tasty. I like to put broccoli, onions, peppers, etc in there.

I'm planning on going home to visit my parents around mid july so hopefully we will be in the same place at the same time! That would be amazing :)

we have stir fry like once a week but I don't know what ELSE to make! lol We eat umm this sausage and peppers thing I make that's in a pampered chef cookbook, its good its low fat and its with turkey sausage and penne and red yellow and green peppers and tomatoes and a tiny bit of parmesean cheese. We also really like steak so we make that once a week too but I need to make something with it besides white potatoes, I'm thinking I'll try out this sweet potato fries recipe I found and see if we like them, hopefully! then usually one day we'll have grilled chicken with rice and veggies, I'm just trying to think of new things that are good for us that we'll like so we aren't always eating the same stuff and getting really really bored! Thanks for the advice!! Oh I REALLY REALLY hope we are both home at the same time!!!! You NEED to meet Alex! :-) Maybe I'll get to meet someone too? Who knows?

By someone you mean Joe? yea, I hope so, he should be coming with me then :) I love that italian dish you described, it is so amazing. I dont know if you guys will like it but if you get tired of rice you could try quinoa - its kind of like couscous in shape but its a really healthy grain. it has all the essential amino acids and lots of protein, and is kind of nutty tasting. I think its really good as an alternative to rice. You just cook it like you would rice with 2 cups water to 1 cup quinoa and let it cook until its not crunchy. I like the red kind better than the white kind ( ... )

Aww! Love you too! Yeah I have been wanting to try quinoa but I can't find it here, not at the commissary anyway . . . Dan hates everything so no stuffed peppers OR broccoli for him, I love broccoli and peppers though, that's the main problem, he just doesn't like ANYTHING that's good for him!!

Oh and yes I meant Joe! lol

Summer Star is around the end of July, it is very family oriented and there are crafts and things to do with littles. The web site is summerstar.org We are going this year instead of Fairy Worlds, I like summer star because it is so family oriented and not as big.
And ditto on the stir fry, ummmmmm.
I can't wait to see you again and this time I am feeling better!

Oooh that would be so fun! I'm not sure though because it might be going on while Dan is planning on us being in Montana, but I think if it is then we could work around it and go visit his family either before or after. We wont know ANYTHING for sure until like May anyway so I guess we have to wait and see! I know Alex would have fun playing outside and camping though!
