Fresh, just wash thoroughly and saute lightly in olive oil or, better yet, truffle oil. Use a garlic press to squeeze the juice out of a couple of garlic cloves while sauteeing. Add a teensy bit of white cooking wine, salt and pepper. Serve over spaghetti noodles with grated parmesan. HEAVEN, I tell you.
If they are dried, soak for 1 hr. in warm water. Then do like above, but use red cooking wine instead, add a dash of red pepper flakes, and expect a woodier flavor.
Never throw them into a heavy sauce like a marinara or alfredo. Their light but intense flavor will be lost.
