No pressure. I just sometimes feel the goofy urge to write you, even just to talk about silly things like what's going on in the exciting world of aqua terraforming and, you know, stuff.
Also... my friend biomekanic is celiac, which is a type of allergy to wheat. Have you done any Googling on that to see what information there is to see? It might help, might not. Figure it's worth mentioning. :)
Oh, very worth mentioning! I found out about the situation when an acquaintance who's also celiac visited the area - we avoided eating things she'd give us sad eyes for over the long weekend, and by the end of the long weekend I *did not hurt*, and stayed *not hurting* and capable of actual physical activity for several days till we had, uh, hamburgers. With buns. Oops. Three weeks of a food diary narrowed it down pretty nicely.
There are several different types of allergy to wheat, but celiac seems to be the one with the most information out there, including precious precious precious things like 'barley is also evil' and 'oats *may* be evil depending on the brand' and 'here are the things that are *not* evil and can be used as substitutes.' I have not gotten brave enough to try cooking with rice or buckwheat flour yet, but my brother's using this as a *total* excuse to play with new recipes. It's really funny to watch him scurry around delightedly over it.
Awesome. I've been tinkering with recipes as well, since biomekanic is celiac and miladycarol has a different allergy to gluten, but gluten all the same. For pastry shells like pie crusts and such, I've found that quinoa flour is a good substitute if you sweeten it a bit and give it a dash of lemon juice to smooth out its bitter flavor.
Any other breakthroughs I come up with, I will happily pass along. :)
