So all I have to do in the morning is take the crockery pot of the slow-cooker out of the fridge and put it into the slow-cooker aparatus, add beef stock, set to low/med heat, and go to work

This is roughly what I do for a pot roast, so yes, it works. Made some a week ago, as a matter of fact.

Add corn, peas and a handful of rice or barley and this is how I make stew. It is easy and tastes great.
