At work we've decided that we want to change the handful of graphic novels that we have in our entertainment section into a proper section in their own right.

Manga wise, you need
Full Metal Alchemist; absolute must.
Full Metal Panic; I don't read this one, but everyone else has it, so why not :P
Bleach, absolute must as well.
Fruits Basket; this is a teengirl bishie boy one that all the kids just love. (me too)
Bunne has more of an idea of Manga, so I'll let her fill you in on that. I'll get onto the American ones.
Anything by Frank Miller. If you can get all of Sin City, it would be really good. But I do have to point out, this isn't for children. Don't mistakenly put it in the Young Adult section, I see this all the time, and it's not something you want the kids to pick up.
I didn't like his Batman stuff, but everyone else did, and if you're going to have a comic book section, you need Batman. And The Dark Knight Returns was the book they used for the Batman Begins movie ( ... )

I have to agree with Flit's suggestions - they're all brilliant ones. :D Some other manga choices would be: Death Note, Inuyasha, One Piece, Rurouni Kenshin and Naruto. And also one of my favourites (and one that I've neglected sorely of late): Ouran Highschool Host Club.
Otherwise, you could always browse about sites such as Viz Media and Tokyopop and see what takes your fancy. You can usually read the first chapter of most mangas on those sites, so that should give you a reasonable idea of what they're all about.

When I do something like this I like to do it properly. And I want to stock stuff that people actually read, not just what the publishers tell me they read (which is often what they want them to be reading, not what they are.)
