CUBAN SPICY JALAPENO MEATBALLS
Makes about 30

2 jalapenos, chopped
1 pound ground beef {or ground turkey}
1 egg
1/2 cup breadcrumbs
1/4 cup milk
1/4 cup Monterey Jack cheese, grated
1 small onion, chopped
Salt to taste
Pepper to taste
16oz jar of Salsa of choice

Form meatballs out of everything but the salsa. Cook uncovered in 400F oven, 15-20 minutes. ( Read more... )

For me, I would like to add more cheese along with milk, which will tastes creamy for sure, also I just add 1 chopped jalapeno as it is too hot for me, in a work, these meatballs are fantastic for sure as I made last night with my friends here, I hope next time I will try to substitute chicken for ground beef, hah.

I tried this with 2 jalapenos( with most of the seeds taken out) and cheddar rather than monterrey jack. Very good beef meatballs. Definitely not too hot for me. Next time I'll leave all the seeds in.
