Wow! I don't have the patience to do a list like you have, but you've inspired me to calculate that in the last 3 years I've been to 8 Doctor Who Conventions, 4 Torchwood Conventions, 4 multi-fandom Collectormania-style events, plus a few stamp/ book/ audio signings and 1 stage door (Oliver!). In my 3 Doctor Who/ Torchwood Autograph books I have 108 autographs from people met at these events - the first is Noel Clarke (Jul 07), the last is Gareth Thomas (Nov 09). For non-Dr Who/ Torchwood people or where I've met people more than once, I've had other items signed instead and I haven't kept count of those. Most-met is Gareth David-Lloyd - 12 times since 26 April 2008 (The Rift/my birthday!). The next highest number of meetings, I think, are Kai Owen and Anneke Wills (Polly in 60s Dr Who), both of whom I've met at least 5 times. Most exciting meetings - GDL (every time!), Phil Collinson, Russell Tovey, Toby Whithouse, Joseph Lidster, James Moran, Paul McGann, Peter Davison, Georgia Moffett, Tom Baker, Amy Manson, Lisa Bowerman.
