Honey Pizza

The other night I dreamt I ate pizza with honey on it. I have this thing where if I dream about a food, I obsess about it until I eat it. Fortunately, a couple weeks ago, I had this tasty goat cheese and honey snack and it became clear I had to create a honey pizza. It was amazingly good.


If you want to try it, you'll need:
Pizza crust
Olive oil
Half cup honey
1/3 cup water
Pizza cheese (mozzarella and cheddar is what I used)
5-6 oz soft goat cheese
Balsamic vinegar
Some roasted walnuts
Fresh rosemary

On your pizza, thinly spread olive oil on with a spatula. Put on however much shredded pizza cheese you want. I recommend using less than you usually would, because there's going to be a lot of goat cheese. Thinly slice the goat cheese and place it fairly evenly over the top. Take a little bit of the rosemary and chop it up to sprinkle on top. Cook it! (If you're using Boboli crust like me, 450 degrees for 10 minutes).

While it's cooking, put the water and honey in a pot and bring to a boil. Throw in some sprigs of rosemary and reduce to simmer. Cook for about 10 minutes, or until it simmers down to a half cup of liquid. Remove from heat and remove the sprigs. Then comes the Balsamic. The recipe I read called for 3 1/2 tablespoons. I used something less than that. Mix it in!

Hopefully you'll time it better than I did and the sauce and pizza will finish about the same time. Throw some walnuts on the pizza, and drizzle the honey sauce over it.

Except I think I have way more honey sauce than I need. I'll probably need to save it and eat it on something else.
