Would any self-respecting dessert-maker create a delicious chocolate mousse then put sour cream on top of it????

Sour cream goes in fajitas. Not with chocolate.

Sometimes the sour of soured cream (or other things) actually goes really, really well with super rich / sweet stuff. In other words, I'd hit it.
