Super Metroid without a doubt
in fact I can wake up tomorrow, beat it in two hours with 98% in one go.  Sometimes, I do just that when I have enough spare time.

"Old school" is far too big a category. Space Quest? Jackal?

If it's a Super Nintendo game, probably Super Metroid or A Link to the Past. Super Metroid is one of the few games to pull off the nearly impossible: ambiance and tension in a SNES game (Clock Tower did well, too).
