I'm getting away with light cooking duties. Made a dip except I complicated things by toasting the walnuts first. So that took all of 15 minutes or something. oh yes and I drained the beans- duh ( Read more... )

I made two or three times too much- but I am excited to try baking my roasted vegetables into bread- possibly pizza dough because that's not too bad in terms of fat to flour ratio. Right now I'm thinking some potato/celeriac mash with roasted veggies on top and a few flecks of bean dip inside a pocket. maybe add a little thinly sliced carrots and parsnips. I think I might just have an awesome lunch there. maybe two layers of dough seperated by a tablespoon of butter in little bits between the layers. I think it could kick some ass. There's enough stuff that I could make like five of these things and not even have used too much tasty food up. We went overboard- a result of having pitiful sick parents on thanksgiving.

Yeah I just can't see making one yet- it's too heavy- so much butter. maybe if I find a recipe that doesn't encourage a stick per pasty...
But I'll see how the pizza dough works- it should be pretty good and an extra tablespoon of butter might do some nice things.
