I am glad to report that rebuilding works in Square Zero are nearing completion. I'm just a farmhand, but from what I was told by the boss:

-Nearly a third of the vegetable crops lost to the fire and were replanted will be mature in less than three weeks.

-The rest will follow in late December to early January, depending on if conditions remain top notch (I'm really good at my job, don't worry! I'll try and make 'em grow faster by reading books to the plants and everything!)

-Estimated return to normalcy is the end of January. The farm I work at won't see any surplus stock until then, and we base our estimates on that.

...And I'm told the number of asparagus plants that burned up will take a year or two to replace, if that matters. I don't eat the stuff.

If you have any knowledge on the subject, we would be glad to hear it. Supplies of processed items have become lower than usual due to recent events, but there are plentiful supplies of what I assume to be herbs growing naturally on Wellspring Island.
