whitey's baked mac & cheese

Last night's yummy, simple dinner.

1 lb. package pasta (such as penne, medium shells, rotini, etc.) -- regular or whole wheat
1 1/2 c. container lowfat cottage cheese
1 1/2 c. sharp white cheddar cheese, grated
1 egg white
approx 2/3 c. milk
1 1/2 T. flour
2-3 cloves garlic, finely minced
freshly grated nutmeg (pinch)
freshly grated black pepper (to taste)
1/2 c. swiss cheese (or more cheddar)

Boil pasta till a bit underdone (a few minutes less than recommended cooking time), drain.
In medium-sized bowl whisk together cottage cheese, egg white, garlic, pepper & nutmeg. Mix a few tablespoons of milk with the flour to make a paste, slowly add rest of milk. Add milk misture to cheese mixture, stirthoroughly. Stir in cheddar cheese and pasta - mix thoroughly. Pour into square shaped baking dish. Sprinkle swiss cheese on top. Bake at 350 for 30-35 minutes or until golden on top.

Measurements are guesstimates as I didn't formally measure anything. You could also cover with foil for the first 15 minutes if you don't want a crispy top.
