I have considered myself left-handed because I write and eat with my left hand. However, I use scissors, play sports (rarely), and strike matches with my right hand. *grin* Mixed-handed just sounds better than "ambidextrous". Or "confused". And with strings you'd sort of have the same problem, but in a "pat your head whilst rubbing your belly" sort of way. Most everyone has the difficulties you've mentioned when learning piano. It's easier when you're younger but not completely impossible for us folks. You just take it slow and train your hands. Not all of us have that sort of patience though, so I understand. ::points to herself::
