1.) They can't bleed in the sense that a human can. Well, they can, but they don't need their blood to live. Rather than blood, they have more of a spiritual ichor. If you attack one with a silver weapon, it damages them on the spiritual level as well as the physical. The more spirit that "bleeds", the weaker the vampire becomes. A silver or wooden stake to the heart breaches the heart of their spirit, immediately releasing it into the netherworld and thus killing the vampire.
2.) Generally around a week to two weeks, just like a human. If they go to long without feeding, they grow weak and delerious -- and may wander into the sunlight in that state. After too long (three weeks or the like) their spirit will leave their undead body, making them truely "dead".
3.) A black cat, I would say.
