Well, there are server versions of Ubuntu/Kubuntu. Not sure that it would be my first choice. They should have pretty good gui tools for configuration, though.
If you want stable and don't mind a bit old software, there's always Debian. Once you get the config files right, it'll run forever. It's been a long time since I've used debian but what I remember is that there is more fiddling with the command line and config files than with Ubuntu.
