OK, so, going to get cell phones (one for me, one for MJ). (Honestly, I am crazy and want to try to pull this off before GenCon... I know, I know.) iPhone is too pricey monthly, as awesome as it is. Looking at some Samsung phones... recommendations please?

Most cell phone carriers will give you a free phone (or sometimes a choice between two) when you contract with them. If you're only interested in the calling capabilities, such a phone suffices quite nicely. This assumes you're going to contract with someone though.

If you plan on just going by the minute, my experience is less useful.

It's not crazy, they can activate pretty fast. But what do you want it for? Temporary contact ability during Gencon, then letting it lapse, or changing your life to general cell phone power, even letting your land line lapse? Do you have digital cameras already, or care about the quality of the phone's camera? Do you want good Web/Net/email ability in your phone, or a full keyboard, or do you want JUST A PHONE, THANKS? Different choices, different options ( ... )

In terms of companies, I'd rec Verizon. I've had minimal issues since I started with them prior to 2001, and their "New Every Two" plan is pretty neat too. You can get a wide variety of phones as well, from bare bones basic to omigawd look at the shinytech.
