The big barbie was built in the garden out the back, and the kegs of Coopers Pale and Sparkling, Tooheys Old, Eumundi and James Squires, Carlton Draught and a few irish ring-ins (no pub should open without Guinness and Kilkenny).
Would the locals like the menu? Big steaks brought in from near Mudgee? Prawns and Bugs from the coast? Old tassie potatoes baked in their jackets, with slatherings of butter. Roast lamb cooked slowly in red wine, and all sorts of roast veges. Kangaroo fillets cooked blue and served with summer salads. Crocodile and reef fish. Home made timtam icecream.
Such a risk, would it be worth it? She smiled and reached behind to untie the old apron from around her waist. She was committed now!

"Hey," she called out to the innkeep, who was currently wrestling with her apron, "are you ready to deal with a million people sporting disgusted expressions asking what a Moreton Bay Bug is?"

"Hey there," she replied, dropping the apron behind her onto the doorstep. "Well, I'm bringing in Moreton Bay and Balmain bugs, so it should be a blast. At least I'm not importing the giant cockroaches that live under Sydney Harbour. Even the locals don't eat those! You've obviously eating in Aus?"
Stepping forward she held out her hand. "Hi! I'm Meredyth, but people at home call me Mere. Actually, they call me a lot of things, and I'll answer to most of them! Nice to meet you?"
