Ice cream

OK all you ice cream folks, what machine do you have?  Mine sucks.
And I had the Mark Hix elderflower and wild strawberry jelly tonight.
My life will never be the same.

I have this one. It's good, It handles all that I throw at it pretty well. I admit I want to eventually upgrade to something bigger or more powerful. But in the mean time this does what I need it to do.

I bought something like this but I'm failing in my ice cream endeavors... I think I have to nearly freeze the custard first. And a chef told me to use whipping cream not single or double cream. hmm.

I use whipping cream but I don't use the stuff that has carageenan in it. (I don't like what it does)
I do tend to make custard-based ice creams and I make sure they are nice and cold. I will put it in an ice bath and then pop it in the fridge for a bit. Once I churn it I then put it in the freezer to ripen for at least an hour. It improves things.

What isn't working for you?

I have the Cuisinart ICE-50BC and it's great. You can make as much ice cream as you like because the machine does the freezing. The downside is that it's super noisy.

oh man - that looks awesome but DH would kill me if I spent £250 on a gelato machine!!
