First of all, that Grail can't grant wishes properly. Secondly, it's taken over by an evil that would see all of mankind dead. Third, making a wish unleashes that power on the world.
Your master here probably didn't know all of this in that way but he got the feeling that the Grail was evil.
So after hearing all that Saber, would you make a pact with the devil just to get what you want?
