Beans as a Meat Replacement.

I have fallen in love with beans, specifically black and kidney. Over the last two weeks I have been on a mission to find out how well they work to replace meat, and I have been so surprised to see that they work wonders. Ever since I've started to use beans as meat replacement, I've fallen in love with pinto beans. Also, your recipe sounds delicious!

Yum! That sounds really fantastic!
I'm about to muster up the courage to finally use my pressure cooker (that thing scares me!) to make beans on the stove top. I hear it only takes like 30-40 minutes to make them even without soaking! :) I'll let you know how it goes, haha :)

You might want to be a bit careful there - I'm sure you'll still have to rinse them thoroughly and discard the water you 'pressured' them in. But yes no more soaking overnight. Got to be a winner.

Yeah, thanks for the tips! I am planning on rinsing them a lot beforehand, and I only use organic beans (though I don't know if that's why that matters, just saying). I won't need the water they cooked in anyway :) so no problem there.

'I sauteed kidney beans in a pan with a little garlic, salt, pepper and olive oil'. Never occurred to me before. Will have to try this as I love beans.

I'll give the garlic a miss though - filthy, evil stuff ;-)

I'll chop a small green chilli in with them instead - and thinking about it. This will be very NOM stirred through some fresh cooked spaghetti. Add a couple of chopped small tomatoes. Extreme NOM!

I have been meaning to try more with lentils. I LOVE their texture. Any recommendations for a good soup recipe?

Yum. Mushrooms are also awesome as meat replacements in pasta dishes.
