Recipe: Black Bean Tacos

I decided to try a new recipe today, one that was pretty standard so I wasn't following by anything but what sounded good to me at the time, and what I had in my cupboard. This was enough to feed four plus provide leftovers for tomorrows lunches for the same four.

Here is a run down:
  • 2 cans of black beans, drained and washed. 
  • 1 can corn, drained and washed.
  • 1/2 large onion, diced.
  • 1 bell pepper, diced.
  • 1 can diced tomatoes, drained and washed.
  • Flour tortillas.
  • Corn taco shells.
  • Cheddar cheese, grated.
  • Sour cream or salsa
  • Garlic powder.
  • Salt.
  • Pepper.
  • Comino.
  • Chili pepper
Basically, you start by sauteing the onions in an oil of your choice, I used olive. Then, once they are transparent, you pop in the bell peppers until they are almost to the firmness you like, then the beans, corn and tomatoes, along with all spices. Make sure you go kind of heavy on the comino (also known as cumin) and chili powder, so that it almost resembles the taco sauce you get in little packets.

Add the mixture to the shells or tortillas, with a little cheese and sour cream. Obviously for the vegans out there it would be easy enough to replace the dairy ingredients with non-dairy. It tastes great, either way, only takes a few minutes, and is pretty good for you.
