This sounds really tasty! I bet that at least the cucumbers, and possibly the radishes could be grated with a food processor - mine has a grater attachment.

"eat the ends that are not cooperating" That sentence is kind of funny out of context.

Be careful with a food processor. The cucumber can disintegrate into a wet mush very easily. The radishes would probably do a little better in there.

I like to pretend your instructions are only one sentence long, it makes me giggle.

Shredded Cucumber and Radish Salad

Ingredients:

3 good sized cucumbers, peeled & seeded
1 bunch radishes
1 cippollini onion
1 bunch Italian parsley
1 ripe but firm tomato (use a good heirloom one)
1 lemon
1 teaspoon sugar
salt and white pepper to taste
olive oil to taste
unflavored yogurt as a dressing

Everything goes into one big bowl.

:-)
