I'm lucky in the fact that my family prefers not to eat a whole lot of meat... I mainly use it in casseroles or soups. Where I would have to use four pieces of chicken if I were to fry it if I make a soup then I only use two. I've had difficulty freezing pasta. Do you find it coming out mush? Any tips? Somehow they freeze it for frozen dinners without it turning to mush, I just haven't figured out how. I like your Ideas :) We think alike when it comes to weekly meal planning.. I sometimes make two meatless dishes or more, or vegetarian dishes, I'm trying to slowly lean more toward vegetarian meals overall.
I haven't actually taken the pasta out of the freezer just yet *laughs* I googled "Freezing Pasta" & it looks like larger pasta (lasagna noodles, jumbo shells) freeze best... I have elbow macaroni in my freezer right now when I get around to taking it out, I'll let you know how it worked :D
